This Teriyaki Salmon Avocado Rice is a flavorful and nutritious dish combining tender salmon glazed with sweet teriyaki sauce, creamy avocado, and fluffy rice for a perfect meal any day.

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice
  • 1 ripe avocado, sliced
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame seeds (optional)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions and set aside.
  2. Heat vegetable oil in a skillet over medium heat.
  3. Season salmon with salt and pepper.
  4. Place salmon fillets skin-side down in the skillet and cook for 4-5 minutes.
  5. Flip the salmon and brush generously with teriyaki sauce.
  6. Cook an additional 3-4 minutes until salmon is cooked through and glazed.
  7. Divide cooked rice between plates.
  8. Top rice with teriyaki salmon, sliced avocado, and sprinkle with green onions and sesame seeds.
