Texas Caviar is a refreshing and flavorful bean salad, perfect as an appetizer or side dish. This vibrant mix of beans, corn, and peppers is tossed in a zesty lime vinaigrette for a delightful Tex-Mex twist.

Ingredients

  • 1 (15-ounce) can black-eyed peas, rinsed and drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black-eyed peas, black beans, corn, red bell pepper, red onion, and jalapeno (if using).
  2. Add the chopped cilantro to the bowl.
  3. In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, cumin, and garlic powder.
  4. Pour the dressing over the bean mixture and stir gently to combine.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled with tortilla chips or as a side dish.

Notes

For an extra kick, add a pinch of cayenne pepper to the dressing. Texas Caviar is also delicious served as a topping for grilled chicken or fish.
