  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 (15 oz) can tomato sauce
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup chopped cilantro, for garnish
  • Salt and pepper to taste
  • Cooked rice or naan bread, for serving

Instructions

  1. In a large bowl, season the chicken cubes with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
  4. Stir in the garam masala, turmeric powder, chili powder (if using), and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  5. Pour in the tomato sauce and bring to a simmer. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  6. Stir in the heavy cream and cubed butter until the butter is melted and the sauce is smooth.
  7. Return the cooked chicken to the skillet and stir to coat with the sauce. Simmer for another 5 minutes, allowing the flavors to meld.
  8. Garnish with chopped cilantro and serve hot over cooked rice or with naan bread.

For an extra layer of flavor, try adding a squeeze of lemon juice to the finished dish. Serve with a side of steamed vegetables for a complete meal.
