  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup toffee bits
  • 3/4 cup buttercream frosting

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients; mix until combined.
  6. Fold in half of the toffee bits gently into the batter.
  7. Divide batter evenly among cupcake liners, filling about 2/3 full.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cupcakes to cool completely on a wire rack.
  10. Frost cupcakes with buttercream and sprinkle remaining toffee bits on top for crunch.

Notes

For an extra indulgent touch, drizzle melted chocolate over the toffee topping before serving.
