  • 1 1/2 cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • For the Filling:
  • 12 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 1/2 cup milk chocolate, chopped
  • 1/4 cup white chocolate, chopped
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For Garnish:
  • Chocolate shavings

Instructions

  1. Prepare the Crust: In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie plate.
  2. Bake the Crust (optional): For a firmer crust, bake at 350°F (175°C) for 8-10 minutes. Let cool completely. Alternatively, refrigerate for at least 30 minutes.
  3. Make the Filling: Place bittersweet chocolate in a heatproof bowl.
  4. In a saucepan, heat heavy cream over medium heat until it just begins to simmer. Pour hot cream over the chocolate and let sit for 1 minute to soften the chocolate.
  5. Whisk until smooth and glossy. Stir in vanilla extract and salt.
  6. Pour the chocolate mixture into the cooled crust.
  7. Sprinkle chopped milk chocolate and white chocolate evenly over the filling.
  8. Chill the Pie: Refrigerate for at least 4 hours, or preferably overnight, until the filling is set.
  9. Garnish and Serve: Before serving, garnish with chocolate shavings. Slice and enjoy!
