Ingredients

Scale
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/2 cup low sodium chicken broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper; sauté until softened, about 5 minutes.
  2. Add garlic and cook for another 1 minute until fragrant.
  3. Add ground turkey to the pot, breaking it apart with a spoon. Cook until no longer pink, about 7-8 minutes.
  4. Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook spices with meat for 1 minute.
  5. Add diced tomatoes, tomato sauce, kidney beans, black beans, and chicken broth. Stir to combine.
  6. Bring mixture to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if needed. Serve hot, optionally topped with shredded cheese, sour cream, or chopped green onions.

Notes

For extra depth, let the chili simmer longer to develop richer flavors or serve with cornbread for a complete meal.
