Turkey Medallions with Orange Teriyaki Sauce

Tender turkey medallions glazed with a zesty orange teriyaki sauce make for a delicious, healthy dinner that’s quick to prepare and full of vibrant flavors.

  • 1 lb turkey tenderloin, sliced into medallions
  • 1/2 cup orange juice, fresh
  • 1/4 cup soy sauce (low sodium)
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 2 garlic cloves, minced
  • 1 tbsp sesame oil
  • 1 tsp cornstarch mixed with 2 tsp cold water
  • 2 green onions, sliced
  • Sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  1. Season turkey medallions with salt and pepper on both sides.
  2. Heat sesame oil in a skillet over medium-high heat.
  3. Add turkey medallions and cook 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. In the same skillet, combine orange juice, soy sauce, honey, rice vinegar, ginger, and garlic.
  5. Bring sauce to a simmer and cook for 3 minutes until slightly reduced.
  6. Stir in cornstarch slurry and cook until sauce thickens, about 1-2 minutes.
  7. Return turkey medallions to the skillet, coating them in the sauce and warming through.
  8. Garnish with sliced green onions and sesame seeds before serving.

Notes

For a complete meal, serve with steamed jasmine rice and sautéed vegetables like snap peas or bell peppers.
