  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened

  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons unsalted butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Red food coloring (optional)
  • Heart-shaped sprinkles or fresh raspberries (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini heart-shaped cake pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter evenly into the prepared mini heart pans, filling about 2/3 full.
  7. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  8. Allow cakes to cool completely in the pan for 5 minutes, then transfer to a wire rack to cool fully.
  9. To prepare frosting, beat cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Add a few drops of red food coloring if desired.
  10. Frost the cooled mini heart cakes and decorate with heart-shaped sprinkles or fresh raspberries.

Notes

For extra flavor, try adding a teaspoon of almond extract to the batter or frosting. These mini cakes are also delicious served chilled.
