Vanilla Pecan Pralines

Delightfully creamy and crunchy, these Vanilla Pecan Pralines blend rich pecans with smooth vanilla-infused caramel for a classic Southern treat.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 1/2 cups pecan halves
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, heavy cream, butter, and salt. Stir constantly until mixture comes to a boil.
  3. Continue cooking and stirring until the mixture reaches 238°F (soft-ball stage) on a candy thermometer.
  4. Remove from heat and stir in pecans and vanilla extract.
  5. Beat the mixture with a wooden spoon until it thickens and loses some of its gloss (about 3-5 minutes).
  6. Quickly drop spoonfuls onto the prepared baking sheet.
  7. Let pralines cool at room temperature until set, about 1 hour.

Notes

For an extra touch, sprinkle a small pinch of flaky sea salt atop each praline before they set to enhance the flavor contrast.
