Bowl of Steaming White Bean Soup

This creamy and comforting white bean soup is packed with flavor and is incredibly easy to make. Perfect for a quick and healthy lunch or dinner, it’s sure to become a new favorite!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in vegetable broth, cannellini beans, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove from heat and use an immersion blender to partially blend the soup until creamy. Alternatively, carefully transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in lemon juice. Taste and adjust seasoning as needed.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For an extra layer of flavor, top with a swirl of pesto or a drizzle of olive oil before serving.
