Cozy Bowl of White Lasagna Soup

This creamy White Lasagna Soup captures all the comforting flavors of lasagna in a warm, comforting bowl. It’s a delicious and easy weeknight meal the whole family will love!

  • 1 pound Italian sausage, removed from casing
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup chopped fresh basil
  • 9 lasagna noodles, broken into small pieces
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain any excess grease.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes. Stir in the oregano and red pepper flakes (if using).
  3. Pour in the chicken broth and bring to a boil. Add the lasagna noodles and cook according to package directions, about 8-10 minutes, or until noodles are tender.
  4. Reduce heat to low. Stir in the heavy cream, cream cheese, ricotta cheese, and Parmesan cheese until smooth and creamy.
  5. Stir in the fresh basil. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan cheese and fresh basil.

Notes

For a thicker soup, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup during the last few minutes of cooking.
