Yellow Squash Parmesan

Yellow Squash Parmesan is a delicious and easy-to-make baked dish featuring tender yellow squash slices layered with Parmesan cheese and a crispy breadcrumb topping. Perfect as a comforting side or a light vegetarian main.

  • 3 medium yellow squash, thinly sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian-seasoned breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss the sliced yellow squash with olive oil, minced garlic, salt, pepper, oregano, and basil until evenly coated.
  3. Spread half of the sliced squash evenly in a greased baking dish.
  4. Sprinkle half of the Parmesan cheese over the squash layer.
  5. Add the remaining squash slices on top, then sprinkle with the remaining Parmesan and breadcrumbs.
  6. Bake uncovered for 25-30 minutes until the squash is tender and the top is golden brown and crispy.
  7. Let cool for 5 minutes before serving.

Notes

For added flavor, sprinkle chopped fresh parsley or basil on top before serving, or add a layer of marinara sauce for a heartier dish.
