  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add the mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and stir in lemon zest, lemon juice, vanilla extract, and salt.
  4. Quickly fold in the Rice Krispies cereal until well coated.
  5. Press the mixture firmly into a greased 9×13 inch pan using a buttered spatula or wax paper.
  6. Allow to cool at room temperature for about 30 minutes before cutting into squares.
